This is one of those weekends. Lots of “outside” activities and the time change. We were out late last night, and today we have the Little Yellow Music House. So I decided to give myself a break this week and buy pre-packaged frozen vegetables to use in my lunches this week. They had a couple of tasty-looking options at Whole Foods – see this post’s pic. Organic, no weird ingredients, OK.
So the only real cooking I needed to do was the chicken that goes into the lunches with the veggies. I also use it in snacks and as protein with breakfast every day.
And happily, I was completely done in the kitchen by 1:30, so plenty of time to spin and shower before we head out.
